With an electric mixer beat in the eggs one at a time. Whisk flour, baking soda, salt, and cinnamon in a medium bowl until very well blended. In a mixing bowl, mix sugar, vegetable oil, and eggs.
Add the eggs, oil, carrots and vanilla; beat until combined.
Add the flour, stirring until well blended.
Stir in carrot, crushed pineapple, coconut and pecans into the Wet ingredients bowl. Apply a generous dollop of frosting and spread to cover. In a medium sized bowl whisk together vegetable oil, brown sugar, white sugar, eggs, applesauce, and vanilla.
