Almond Flour Carrot Cake. In a small mixing bowl combine the almond flour, coconut flour, baking powder, baking soda, and spices. Stir the wet ingredients into dry ingredients.
In a medium bowl, add the almond flour, tapioca starch, coconut sugar, baking soda, cinnamon and nutmeg and stir with a wire whisk. Once cooled, chop them into pieces. Divide the batter: Add the almond flour carrot cake batter to the two cake pans evenly.
Stir the carrots into the batter than slowly add the batter.
Stir the wet ingredients into dry ingredients.
Last, stir in the coconut oil. Beat together the oil, sugar, salt, eggs, spices, baking powder, and baking soda. Add the dry ingredients: almond flour, coconut flour, baking soda, salt, cinnamon and flax seeds in a mixing bowl and mix with a fork.
