Gluten Free Chocolate Chip Cookies. In large bowl, beat sugars, butter and vanilla with electric mixer on low speed, or mix with spoon, until well blended. In medium bowl, stir rice flour, xanthan gum, baking powder, baking soda and salt until thoroughly blended.
In a separate bowl, add your gluten free flour, bicarbonate of soda, salt and briefly mix. Fold in the chocolate chips with a large spoon. The next trick for this gluten-free cookie recipe is to add a tablespoon of milk.
Lightly grease a couple of baking sheets, or line with parchment.
This helps to compensate for the liquid that evaporates from the butter during the browning process.
Combine butter, brown sugar and sugar in bowl. Add the brown sugar, and whisk again to combine, working out any lumps in the brown sugar. Beat with electric hand mixer until combined.
